Ingrédients pour 4:
8 calmars taille moyenne
100 gr. pain casereccio
lait
persil
ail
sel
poivre
150 gr. thon à l'huile
poulpe de tomates
2 oeufs petites
pour le lit d'haricots:
280 gr. haricots blancs déjà cuits
persil
sel
poivre
huile d'olive
Temps de préparation: 20 min.

Nous voilà au quatrième rendez-vous avec le Rifatte senza glutine!

Aujourd'hui c'est le tour de Anna du blog "Ai fornelli con la celiachia" et de sa saveureuse recette "calmars farcis sur un lit d'haricots".
Evider les calmars, les laver et cuires les tentacules (auxquels on a enlevé le bec) en poele avec un fil d'huile d'olive et une gousse d'ail (Anna les a blanchis quelques minutes). Tremper le pain dans un peu de lait (pour moi casereccio Giusto sans gluten) et puis préparer la farce écrasant le pain, ajoutant le thon égoutté, le persil haché, sel, poivre, les tentacules hachés et les oeufs (pour moi pas d'ail). Fourrer les calmars avec la farce laissant un peu d'espace sans arriver au bord et sceller les bords avec un cure-dents. Dans une casserole rissoler une gousse d'ail en un fil d'huile d'olive, arroser avec un peu de vin blanc et verser quelque peu de poulpe de tomates (facultatif. Moi j'ai utilisé un peu de sauce tomates déjà cuite). Laisser cuire quelques minutes et ajouter les calmars, les laissant cuire une dizaine de minutes et les perçant de temps en temps pour qu'ils en cuisson, se gonflant, ne se fendent pas. Rincer les haricots sour l'eau et les mixer longuement avec un peu d'eau chaude. Verser la purée d'haricots sur une assiette (vous pouvez les remplacer avec des pois chiches) et déposer les calmars. Ils sont exquis! Bravo Anna :-)
Que pensez-vous de la photo? Comme depuis quelques jours j'ai commencé à utiliser la Nikon 1 et je suis en train d'apprendre les nombreuses fonctions qu'elle a, je m'excuse à l'avance si les photos ne seront pas encore à la hauter de l'appareil, je suis en train d'étudier et j'accepte volontiers tout conseil :-)
